Healthy College Recipes – Vegetarian Tacos

  

Trying to maintain a healthy lifestyle, but you just can’t stop eating Taco Bell? Well, here’s a vegetarian friendly taco recipe that will keep you full and satisfied, maybe even send you into a food-coma. This recipe makes two tacos, but they’re definitely thick, so you can alter the measurements to your liking!

Ingredients

  • 2 flour tortillas
  • 1 cup of Morning Star ground crumbles
  • 1 cup of lettuce mix of your choice (I usually do American for added other veggies)
  • ½ cup of black beans
  • 4 tbs. of green chili
  • ½ an avocado
  • Shredded mexican blend cheese (reduced fat)
  • Spices and seasonings: salt, pepper, garlic salt, smoked paprika, chili powder

Now for the cooking. This is a really simple meal, and if you have a stove, it only takes two burners with one small pot and one small pan.

Step 1

Set a burner to medium or a 4-5 depending on your stove settings. Follow instructions for prepping the ground crumbles from package by placing crumbles in pan and adding water as needed. 

Step 2

Set another burner to low or 1-2 depending on your stove settings. Place the small pot on the burner and add the black beans. Make sure they’re spread evenly, and then place the lid back on the pot for the beans to cook.

Step 3

Once the crumbles have defrosted but aren’t yet solid (still pretty wet), add your spices to your liking. I don’t measure, but I go by smell. Add your black pepper, salt, garlic salt or powder, smoked paprika, and chili powder and mix it all together.

Step 4

Prepare your plate while the beans and crumbles finish cooking. Set both your tortillas on a plate, place ½ cup of lettuce mix on each tortilla. (We’re not cooking the tortilla for ease of college cooking, but you can microwave them or place them on a warm pan if you want to heat them up).

Step 5

Make sure the crumbles are firm and not squishy. Try to separate the crumbles into halves, and put roughly ½ cup on top of the lettuce in each tortilla. Place roughly ¼ cup of black beans on top of the crumbles. Add cheese to your liking. Put some avocado slices on top to your liking. And finish it off with 2 tbs each of green chili.

This is one of my favorite meals and can be eaten for lunch or dinner. It can be microwaved by adding the water to the crumbles in a bowl in the microwave and then mixing in the seasonings, and microwave your black beans, too. You can also turn this into a veggie taco salad if you replace the tortillas for more lettuce mix!
