Healthy College Recipes: Microwave Nachos
Nachos don’t always sound like the healthiest option, but if done correctly, they can be nutritious and easy to make! This microwave nacho recipe can be prepared in a dorm room and will be ready to enjoy in as little as five minutes!
Ingredients
- 1/2 large bag of multigrain tortilla chips of your choosing
- 1/2 cup of reduced-fat shredded mexican blend cheese
- Jalapeño slices (as many as desired)
- 1/3 cup low-sodium salsa (Ex. Newman’s Own, Trader Joe’s)
- 1 small tub of reduced-fat sour cream
- Taco seasoning
- 1 bunch cilantro leaves
Step 1
Arrange the tortilla chips in a single layer on the plate. It’s OK if the chips overlap, but try your best to ensure that none are being completely covered.
Step 2
Sprinkle the cheese evenly over the chips so that each one receives a generous amount.
Step 3
Spoon the salsa out in generous scoops on top of the chips. Remember to focus on spreading it evenly, as too much salsa on one side can make the chips soggy.
Step 4
Cut the jalapeños in small, thin slices. It’s best to stick to slices, as dicing them can take away some of the flavor and spicy kick. Add the desired amount.
Step 5
Place the chips in the microwave and heat for 1-2 minutes, until the chips are crispy and the cheese is melty. Keep an eye on the dish, as it may need more or less time depending on the microwave.
Step 6
Take chips out and let cool. Once cool, add a generous dollop of reduced-fat sour cream in the center of the chips.
Step 7
Chop the cilantro into thin pieces, and scatter the desired amount over your chips

Sprinkle the taco seasoning over the dish to your liking and enjoy!
